Salmon Wholesaler Recalls Products due to Possible Food Poisoning

The Alaska-based wholesaler, Big Blue Fisheries, recently announced that they are recalling all of their smoked fish products. The recall was made in cooperation with the Food and Drug Administration (FDA). The company fears that a number of products were not cooked properly which could result in severe illness if the product is ingested. There have been no reported illnesses as yet and the situation was discovered during an inspection. Agents with the Alaska Department of Environmental Conservation were conducting a routine investigation when it was discovered that several smoked products may not have been brought to proper temperature or cooked for the proper length of time. The products in question that have been recalled include all smoked salmon and cod varieties distributed from 24 September 2011 through 24 September of this year. It includes items in vacuum packages of all sizes. The undercooked condition of the fish product could result in severe illness caused by botulism. Botulism is a condition caused when a food becomes toxic due to the production of certain proteins by the bacterium Clostridium botulinum in an anaerobic (no oxygen) environment as would exist in vacuum packed food containers. The result is a neurotoxin which causes stress to the nerve and muscle systems. Symptoms can include muscle weakness, double vision, dizziness and difficulty speaking, swallowing and breathing. Additional symptoms are abdominal distension (swollen appearance to belly) and constipation. Seek immediate medical treatment if you have these symptoms.
